Who Is Pizza Fresca?

Meet Patrick and Sarah Anderson

How did Pizza Fresca get started?

Patrick’s family owns a vegetable farm, Anderson Organics. He wanted to find ways to get people to try new vegetables that they might like, so he started making pizzas out of his family’s crops. Four years ago, the Edgebrook Farmers Market asked him to be their regular wood-fire pizza vendor, and since that first big public exposure, they’ve only kept growing!

It depends on the day, but most of all, Patrick loves Pesto Chicken, and Sarah can’t wait for Autumn Bliss to return in August!

Where do you get your ingredients?

Pizza Fresca is always highlighting what’s growing on the farm at the time. Be extra sure to stop by in August, when all sorts of fun stuff is ready for harvest!

On a cloudless day at the Edgebrook Farmers Market, when the chance of rain was at a whopping 0%, there was a flash flood! They were wading through 8 inches of water at its peak, even though it only rained for about 30 minutes. Everything was soaked. Customers huddled underneath the Pizza Fresca tent by the fire in the oven as Patrick and Sarah continued to make their pizzas. It took another hour or two for the water to subside, but they stuck it out and kept serving up some awesome food. What a day!

Why do you enjoy the food truck business?

Patrick really likes to show people new food concepts, flavors, and ways to prepare ingredients. Sarah added that she is so grateful to be in a place where they have the freedom to even run a business. They both expressed how wonderful it is for them to be back out for the season, doing their thing. They feel so grateful and blessed!
